Is there anything more Amish than Shoo-Fly Pie? If there is, we sure haven't found it!
Shoo-Fly Pie is a very old recipe. Some date it back to the nation's early settlers, who brought ingredients over from the Old Country that wouldn't spoil on the long journey across the sea.
What can be universally agreed-upon is that Shoo-Fly pie doesn't require refrigeration and can easily last over a week without spoiling- a characteristic that made it very popular amongst the Amish.
As to the quirky name? Well, it's commonly said that women would take it hot out of the oven and rest it on a windowsill in summer to cool. The molasses would draw flies that would constantly have to be "shooed". Hence, the name Shoo-Fly.
For those of you who have never had Shoo-Fly, it's a very sweet molasses-based pie that essentially bakes up in three layers. At the bottom, you have a gooey, almost pudding-like consistency. Next is a cake that naturally rises and separates above the gooey bottom during the baking process. Finally, there's a third layer of streusel-like crumbs.
The most popular form of Shoo-Fly pie is Wet Bottom, with an extra gooey base, which is the version we offer here. Serve a slice of this warmed up from the oven, with a scoop of vanilla ice cream melting over top, and you've got yourself a slice of Heaven!
The Amish don't just make these pies for tourists- they really eat them as well. Don't let the name shoo you away! This is a regional classic.
