This rhubarb concentrate is simply awesome! If you've never had rhubarb before, please don't be afraid of it! It is a stalk, much like celery, that is cooked with sugar and yields a delicious, tangy, sweet fruit. It is rich in Vitamin C, calcium, and recent studies indicate that rhubarb's fiber may even lower cholesterol.
This pint jar, coupled with an equal amount of liquid (16 ounces, 2 cups, or 473 ml) will yield one terrific beverage. Elam and Malinda suggest water with a touch of ginger ale and orange juice concentrate. We like an equal mix of club soda for an alcohol-free spritzer. Or add some white wine to your club soda mixture....or forget the club soda and add white wine instead! (That is, of course, decidedly not Amish!)
Our canned products are the real thing- handmade by an Amish couple in their kitchen- unlike others you'll see that have Amish names and which are mass produced in factories. As a matter of fact, Elam even grows the produce right on his own Lancaster County farm. Malinda cooks the rhubarb in batches, assisted by her children and husband. This home-grown quality is evident in the taste of the product.

NOTE: You will see a whitish-like powdery substance in the bottom of the jar. This is the completely naturally occuring rhubarb fiber separating from the liquid. Be sure to shake jar before opening.
